Italian Sausage Soup

This one all of my children LOVE even though it has a TON of veggies. I'm sure the sausage isn't great for you, but you could substitute it with something else, or since it has beans, you could leave out the meat! :)

1lb Italian Sausage
2 cloves of garlic, diced
2 cans beef broth
1 can diced tomatoes
1 cup chopped carrots
1/4 tsp salt
1/4 tsp pepper
2 small zucchini quartered and sliced
2 cans great northern beans
2 cups spinach, rinsed and torn

Brown sausage and garlic in a dutch oven, large saucepan, or stockpot. Add beef broth, diced tomatoes, carrots, salt, and pepper. Bring to a boil, cover and simmer for 15 minutes. Add zucchini and beans, and simmer for 15 minutes. Add spinach and remove from heat. Let sit, covered for 5 minutes to allow the spinach to cook.
